Chickpeas nugget (Bill Granger)






 
 
 
I made these for the lil' fella, but I let the hubby tried it and let him guess what was in it. He couldn't guess it. It tasted like chicken, but it was a vegetarian burger/ nugget recipe. Hohoo.. I was very glad of the outcome even though it was a quick one I whipped up in less than 30min. Again, it's the lil' fella's food that I couldn't resist myself eating. I made about 10 of it, I ate 3 or 4 (opps), the hubby ate one, and the lil fella ate 3.
 
It was originally a burger recipe by Bill Granger, I modified it and made it into nugget size so that it's easier for the lil' fella to grip and eat. The oil was a little too hot when I placed the nugget in, so it got burnt. But that didn't affect the taste and texture. In fact, the burnt top gave it a little crispiness. It would have been great with a dipping sauce. But I didn't make one. It would be too messy for a one year old to be eating this with sauce. I just let him eat it on its own.
 

Ingredients

Adapted from Bill's
  • 500g cooked chickpeas (mine was cooked using organic dried chickpeas or garbanzo, it was cooked ahead in a pressure cooker for about 40min)
  • 1 egg (beaten), but I didn't use all      
  • 1 handfuls chopped Thai basil                   
  • 1/4 onion, finely chopped 
  • 1 clove garlic, finely chopped 
  • 3tbsp wholemeal breadcrumbs (from an old wholemeal bun)
  • 2tbsp grated cheddar cheese
Instructions:

1. Heat up 2tbsp grapeseed oil in a frying pan. Saute chopped onion and garlic till fragrant. Stir in chickpeas and sauté. Put onion, garlic, chickpeas and eggs in a food processor or blender and blitz until smooth. Transfer to a bowl and add in Thai basil leaves and breadcrumbs.
2. Shape the mix into about 10-12 small patties/ nuggets.
3. Heat up 2tbsp oil in a frying pan over low heat. Cook the nuggets for 2mins on each side, or until browned.

    1. Oh yea, do give it a try. As it's pan-fried, so it has crispy texture on the outside. Even the adults love them. :)
