Breakfast in a jar: chia oat pudding with coral glass jelly

I love making beautiful ensemble for breakfasts. Something like this. We feel jolly looking at it and eating it. The lil' fella was so happy when he saw this. He finished them all.

This is an easy one, almost like the overnight oat and chia pudding that we've been eating daily, but it has an additional layer, which is the coral g;ass jelly as the bottom layer. Coral glass is a type of seaweed. It is also commonly known as sea bird-nest or the poor man's birdnest, as it resembles birdnest in terms of their dense collagen and high nutrients content.

According to an info by Matanjun et al, 2009, coral glass jelly contains 10times richer amount of collagen than birdnest, 37 times more calcium than cod liver. It is low in fat and calories but bursting with nutrients like magnesium, iron, sodium and calcium.

You can see more about it in this previous post.

To prepare the bottom layer
*2-3tbsp soaked and cleaned coral glass jelly (see previous post on instructions to clean them)
*1/2 cup of fresh milk
*1tbsp dark muscovado sugar

Or here's another recipe using apple juice
*2-3tbsp soaked and cleaned coral glass jelly
*1 cup of apple juice

Boil everything in a pan and continue to stir until the coral glass jelly dissolves. Pour into glass jar to set in the fridge.

In another container, prepare the chia seed and oat pudding with
*2/3 cup of rolled oat
*1 cup of fresh milk
*2tbsp chia seeds

For more idea on the chia seed or overnight oat recipe, please refer here.

Combine everything and stir until the chia seeds are distributed evenly. Let set in the refrigerator.

The next morning, pour the chia and oat pudding onto the coral glass jelly. Top with chopped fruits or nuts.

Overnight oat

Overnight oat with chia seeds, mulberries and kiwi.

Gimme a LIKE, will ya? :p

Overnight oat is the IT 'trend' lately. You'll see posts of your friends having overnight oat on facebook, instagram, blogs, twitters.. everywhere. It's like a self-proclaimation that 'I'm now on a clean-diet'. Come gimme a LIKE. Hahaaa.. I just did it this morning. So no offence seriously. If you do ponder about it, you'll realized that soaked oat has been here for a long time. The lil' fella and I have been eating warmed-up soaked oat with fruits for the longest time ever. The difference now is that we don't heat it up and we serve/ prep it in a tall glass jar. It looks more pleasing to the eye.

Now, let's compare it with the warmed up soaked oat that the lil' fella used to eat. Won't you agree that the 'NEW' overnight oat is definitely looking much prettier?

Here's the recipe for a pretty overnight oat served in a glass jar:
*1/2 cup rolled oat, organic
*1 cup fresh milk
*1/3 cup plain yogurt or greek yogurt

Combine all and soak overnight in glass jar in the fridge. The next morning, prior to serving, top with chopped fruits.

OR this is a yogurt-free recipe which I prefer:
*1cup rolled oat, organic
*1 cup fresh milk

OR  here's the recipe for black sesame and chia seed oat pudding
*1cup milk
*1tbsp black sesame powder
*2tbsp chia seeds
*1 cup rolled oat

Combine all and soak overnight in glass jar in the fridge. The next morning, prior to serving, top with chopped fruits.

Quick no-soak black soy oatmeal

My buddy Kelly asked me if I can snap a photo of all the food me and my lil' fella eats and then send to her, she wants to follow and eats healthier. Sometimes I do wonder. Do I really eats healthier than the others? Oh well.. but I do control on my snacks intake. These days, all bread and cakes are mostly home-baked. I have cut down on munching on crisps. We try not to have them appearing at home, cos I don't want my lil' fella to be munching on them. We snack on yogurt (plain yogurt with fresh fruits) or homebaked muffins or cakes. This recipe I'm sharing is something I can easily prepare in less than 5 minutes. I usually have it when I get hungry at this hour (it's now 4:37pm) with about 3 hours before dinner time. The best thing about this quick no-soak oatmeal, if one bowl isn't enough to fill me up, I can have another bowl. The guilt-sensation of it is almost zero!

You'll need
  • a small bowl or a mug
  • 3tbsp rolled oat
  • 2-3tbsp black soymilk powder
  • half a cup of hot water
  • black sesame seeds
This is a nice healthy snack that is great as breakfast or a late night supper too. It's high in dietary fiber, great for those with or without constipation. Why black soy? Black soy is bursting with iron, great pick-me-up nutrients especially for the ladies.

10-grain oatmeal with rye

Made a hearty breakfast oatmeal for both myself and the lil' fella. This is a ten-grain oatmeal with rye flakes. I shared about the nutritional benefits of rye a few posts back, and gonna repeat them here..

Rye is a cereal grain that looks like wheat. It is generally available in its whole  or as flour or flakes that look similar to old-fashioned oats. Because it is difficult to separate the germ and bran from the endosperm of rye, rye flour usually retains a large quantity of nutrients, in contrast to refined wheat flour. Rye has a handful of benefits that cannot be compared by those made with white flour or even wholemeal flour, here are some listed by whfoods.com:

  • Promotes weight loss
  • Prevents gallstones
  • Substantially lowers type-2 diabetes risk
  • Promotes gastrointestinal health
  • Significant cardiovascular benefits with postmenopausal women
The list actually goes on.

This is a simple recipe yet it's very filling. It would keep you full for the whole morning due to its high fiber content.

Recipe serves two
  • 3tbsp rolled oat, organic
  • 2tbsp rye flakes, organic
  • 1sachet 10-grain powder (about 3tbsp)
  • 1glass (about 250g) warm water
Instructions

  1. Dissolves 10-grain powder in 1 glass of warm water.
  2. In a small pot on a stove, heat up the 10-grain drink, stir in rolled oat and rye flakes.
  3. Simmer for about 3-5min or until oatmeal becomes thick and creamy.
